You can't hear DC offset, no.  There's really nothing wrong with having
DC offset on a digital file, other than it's using a little bit of your
headroom that you could otherwise use for signal.

It sounds to me like you have a signal that is asymmetric to begin with,
maybe because it was clipped when it was recorded?

Nothing about the recording device, just about the sound source.  Vocals
are asymmetric.  Triangles aren't asymmetric.  Bass drums are very
asymmetric.
Flutes aren't asymmetric.
