The mid section is called a sweepable EQ. It is more flexible then a fixed
mid control as it allows you to select the frequency band you want to
boost
or cut.
It looks like you are doing it the way everyone else does it.

Try playing a CD though the channels and spend some time tweaking the
sound
to get more of a feel of what it does.
Or just talk into a mic right at the mixer and adjust.
