If the church uses a PA system to amplify the choir, an omni mic will 
result in feedback much more quickly than a directional mic.

If you're just recording, then your limitations are the acoustics of the 
space and how they contribute to the recording. You'll have more room 
sound to deal with if you use omnis, and the furthher away you position 
any mic, the more room you'll hear.

Make it simple. As they practice, find a spot where they sound good. Put 
the mic there and record.
